Sundried Blueberry Couscous

Ingredients:

    Serving Size : 4
  • 1/3 cup water
  • 1/4 cup couscous
  • 1 teaspoon butter
  • 1 pinch salt and pepper
  • 1/8 cup blueberries -- sundried

Instructions and Comments:

In a small pot, bring to a boil the water, salt and pepper, and the blueberries. Stir in the couscous, turn the heat off and cover the pan. In about 7 minutes, uncover the pan and fluff with a fork. Adjust the seasoning with additional salt if desired.

*note, you can use chicken broth in place of water for additional flavor.
