Focaccia Stuffing

Ingredients:

  1               each  1 pound loaf focaccia
  1               each  carrot -- finely diced
  2             stalks  celery -- finely diced
     1/2          each  red onion -- finely diced
  3               cups  chicken broth
              to taste  salt and pepper

Instructions and Comments:

Cut two slices of bread off of the loaf of focaccia for garnishing the dish later. Dice the rest of the bread into cubes and spread out onto a sheet pan. Place the bread in an oven at 300º until it has completely dried out. It will take about 20 or so minutes. You do not want to brown the cubes, so move them around to prevent browning.

Bring the vegetables and chicken broth to a boil in a large braising pot. Add in the dried bread cubes and quickly begin to incorporate into liquid. Remove the pot from the heat, cover and let sit for about 5 minutes. Fluff the stuffing and spoon into a serving plate. Garnish with the slices of bread and small cuts of the vegetables as shown.

NOTE: You don't have to add any seasonings, other than a touch or salt and pepper, to this stuffing as a properly cooked focaccia is very flavorful, thus a unique and tasty stuffing!
