BBQ'D LEMON MARINATED CHUCK ROAST

Ingredients:

    Serving Size : 8
  • 4 pounds chuck roast -- 2 inches thick
  • 1 teaspoon lemon peel -- grated
  • 1/3 cup cooking oil
  • 3 tablespoons green onions -- thinly sliced
  • 4 teaspoons sugar
  • 1 1/2 teaspoons salt
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons mustard -- prepared
  • 1/4 teaspoon ground black pepper

Instructions and Comments:

Score fat edges of roast to keep from curling
Combine all other ingredients, mix well, place meat in heavy plastic bag and pour in marinade. Marinate overnight in the refrigerator.
Turn several times. Remove from marinade and pat dry reserve extra marinade. Prepare coals for a medium hot fire. Place remaining marinade in a pan and bring to a boil for 2 minutes. Cook for 16 to 20 minutes per side basting often with marinade. Cook to a temperature of 135 to 140 degrees. Remove from heat and let stand for 15 to 20 minutes. Carve roast in thin slices across the grain
