Ingredients:
- 1 1/4 cups sifted flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 2 each eggs -- separated
- 1 cup buttermilk
- 2 tablespoons butter or margarine -- melted
- 3/4 cup pecans -- chopped
- 2 each bananas -- diced
Instructions and Comments:
Sift dry ingredients into mixing bowl. Beat the egg yolks and buttermilk. Pour the mixture and melted butter into the dry ingredients. Do not overmix. Beat egg whites until they are a stiff meringue and fold them into batter with the chopped pecans and diced bananas. Pour the batter into a preheated waffle iron. Cook for about 3 to 4 minutes. Cooking time may vary depending on the iron.
