Sundried Cherry Sour Cream Muffins

Ingredients:

    Makes 12 muffins
  • 4 oz butter
  • 4 oz sugar
  • 1 each egg
  • 5 oz flour
  • 1/2 tea baking powder
  • 1/2 tea baking soda
  • 1/2 tea salt
  • 5 oz sour cream
  • 1 tea vanilla
  • 3/4 cup sundried cherries

Instructions and Comments:

In a power mixer, cream or combine together the butter and sugar until it is light and fluffy. Add the egg and vanilla, mix until incorporated. Add half the dry ingredients and half the sour cream, repeat this step with the remaining ingredients. Fold in the sundried cherries. Spoon the mix into muffin pans. Top with strudel topping and bake at 350 for about 20 minutes. Insert a toothpick, if it pulls out dry, they are done. Enjoy
