Rum Rasin Cheesecake

Ingredients:

  • 1 3/4 cup Graham Cracker Crumbs
  • 2 Tbs Sugar
  • 3- 4 Tbs Butter, Melter
  • 2.5 lbs cream cheese
  • 1.5 cup sugar
  • 1 tbs vanilla
  • 6 each eggs
  • 4 each egg yolks
  • 1 cup Myers Rum
  • 1 cup golden rasins
  • 1/3 cup half and half

Instructions and Comments:

Heavily butter a nine inch springform pan. Line the outside of the pan with foil, wrapping it up the sides. Mix the Graham Crumbs, first sugar and melted butter. Press this mix evenly into the bottom of the pan.
Combine the rasins and rum and set aside.
In a power mixer, beat the cream cheese until it is smooth. Beat in the sugar and vanilla. Add the eggs and yolks one at a time.(be sure to fully incorporate each egg before adding the next one) Blend in the half and half and rum rasins.
Pour the mix into the pan. Place the pan in a large shallow sauce pot that is oven safe. This is called a water bath. Add enough cold water to the sauce pot to come 2 inches up the side of the springform pan. The foil will keep the water out...
Bake at 350 for about 1 hour and 30 minutes. The cake is done when it is dry to the touch. Cool completly before serving.
