Balsamic Grilled Peaches with Tarragon Ice Cream

Ingredients:

  • 4 each peaches -- cut in half seed removed
  • 1 cup balsamic vinegar
  • 1/2 cup honey

Instructions and Comments:

Fire up your grill! Stir together the honey and balsamic vinegar. Soak the peach halves in balsamic vinegar for a few minutes while the grill heats up. Season the grill with some pan coating or oil before grilling. When it is good and hot, place the peaches flesh side down. After a few minutes give the peaches a half turn. Cook for an additional 2 minutes or so. Remove the peaches and prepare to serve.

For the dish place the cooked and still hot peaches in a large bowl, one half flesh side up and one down. Scoop half a cup of tarragon ice cream into each of the up turned peaches. Sprinkle a good 1/4 cup of the candied walnuts on and around the bowl. Garnish with a fresh tarragon leaf. Great stuff.
