Ingredients:
- 2 cups heavy cream
- 3/4 cup granulated white sugar
- 1/2 cup water
- 2 tablespoons tarragon -- leaves removed
- 1 pinch salt
Instructions and Comments:
Combine the sugar water in a small sauce pot. Bring the mix to a boil and add the tarragon leaves. Reduce the heat and simmer for about 15 minutes. Strain off the leaves and cool the remaining liquid. You have just made a tarragon syrup! This in itself is good for pouring over fresh fuits. When the syrup is cool whip it into the cream and add a pinch of salt.
Pour the cream mix into an ice cream maker. Follow the directions the manufacturer has provided for this step. Generally this includes adding ice cubes and salt to the chiller area of the ice cream machine. When the ice cream is ready, scoop it into a plastic container with a lid and store it in the freezer until it becomes firm. Ready to go!
