Ingredients:
- 2 cups walnuts -- halves
- 2 cups sugar
- 1 cup water
- 3 cups canola oil -- for frying
Instructions and Comments:
Combine the sugar and water in a deep sauce pot. Bring the mis to a simmer and cook for about 10 minutes. Carefully add in the walnuts and bring back to a boil. Stir constantly for a good 10 minutes. Strain off the walnuts and spread them onto a lined cookie sheet to cool completely. Meanwhile heat the canola oil in your deep fryer or in a steep sided sauce pot to about 350? Break up the cooled walnuts and submerge them into the hot oil. Cook for about 2 to 4 minutes and strain them from the oil. Place the walnuts on a paper towel to remove any excess oil. Cool to room temperature. Store in an air tight container at room temperature.
