Cumin Crust Seared Ahi Tuna

Ingredients:

  • 4 each Ahi Tuna Steaks, 8oz each
  • 2 Tbs. Ground Cumin
  • 1 Tbs. Ground Coriander
  • 1/2 Tbs Kosher Salt
  • 1/2 Tbs Black Pepper, Ground

Instructions and Comments:

Heat a large, well seasoned cast iron skillet until it is very hot!! Meanwhile, combine all of the spices in a small mixing bowl. Coat each piece of tuna with the spices.
Add a small ammount of oil to the skillet, sear each piece of tuna to the desired level of doneness. I prefer rare to medium rare. Serve on a bed of Saffron Rice *omit the peas for this recipe* Top with 1/2 cup of Tomato Asparagus Provencal
