Chili Pasta Dough

Ingredients:

  • 1 Cup All Purpose Flour
  • 2 Each Eggs
  • 1 Tablespoon Kosher Salt
  • 1/2 Tablespoon Chile Powder
  • 1 pinch Cumin ground
  • 1 pinch Coriander ground
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Roast Garlic, puree

Instructions and Comments:

Sift together the flour and spices. On a food prep surface, form a mound out of the flour, make a depression in the top. (should look like a volcano!). In a small mixing bowl, wisk together the eggs, roast garlic and the oilve oil. Pour the mix directly into the depression and begin to fold in the flour. Continue working until you have a nice ball of dough. (add more flour if needed) Knead the dough for about 5 or 6 minutes. Wrap the dough in plastic and let it rest for 24 hours. Shape and cut the dough on any pasta roller. At this point you are going to either cook the pasta in salted boiling water, cut it into shapes and let it air dry, or make sheets for making ravioli. Either way, this pasta is good!

This dough can be made in an automatic pasta maker.
