Mashed Boniato Sweet Potato

  3             pounds  boniatos
  4        tablespoons  whole butter
  2               cups  heavy cream

Instructions and Comments:

You have to work very quickly here.. Place the pot in which you are going to be cooking the boniatos in the sink and fill it with hot water, let the water run into the pot until you are done peeling the boniatos. Use a small knife to cut away the skin rather than a vegetable peeler, then cut the potato into smaller sections, place them in the water immediately. These things turn brown faster than you can blink an eye. When you are done, spill off a little water from the pot and place it on your stove. Bring the contents to a boil and reduce the heat to a simmer. When the boniatos are tender strain them into a colander. Put the pot back on the stove and add the cream and butter. Back to a boil again with the fat, add back in the cooked boniato. Mash with a wire whip, potato masher, whatever.. Season to taste with salt and white pepper. Spoon the boniatos into a serving dish and garnish with chopped cilantro. Awesome!
