Rice Cakes

Ingredients:

  • Serving Size : 6
  • 3 cups cooked rice -- cooled
  • 6 ounces flour
  • 2 teaspoons hoisin sauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 each eggs -- beaten
  • 1/2 pint coconut milk
  • 1 ounce sesame oil

Instructions and Comments:

In a medium mixing bowl combine the flour, baking powder, and salt. Incorporate the coconut milk, eggs, hoisin sauce and sesame oil. Do not over mix. Add the cooked rice to another mixing bowl. In small amounts pour the batter into the rice. Gradually add more mix until the rice is thick with the batter. Cook on a got greased griddle set at 350º. Serve immediately.
