Ingredients:
- 1 Tbs. garlic, chopped
- 1 Tbs. red onion, finely diced
- 5 Tbs. lemon juice, fresh squeezed
- 5 Tbs. white balsamic vinegar
- 2 Tbs. parsley, fresh, chopped
- 3/4 cup olive oil
- 3 cups cooked white rice, cooled
- 3/4 cup frozen peas
- 1/2 cup carrot, diced, blanched, cooled
- 3/4 cup prosciutto ham, julienned
- 1/2 cup diced red pepper
- to taste kosher salt and fresh ground black pepper
Instructions and Comments:
Pre cook the rice. Using 1 1/2 cup plain long grain white rice, 2 tea salt, 3 cups water, and one chicken broth cube. Bring the ingredientes to a boil. simmer until the rice is tender. Chill thoroughly. In a small pot bring some water to a boil with a little salt. Add the carrots and peas and simmer for about 30 seconds. Strain and cool.
In a small mixing bowl add the garlic, red onion, lemon juice, vinegar, and parsley. Whip the ingredients together and slowly incorporate the olive oil.
In a large salad bowl, add the cooled rice and vegetables, red pepper, and ham. Toss the salad with the dressing and season to taste with salt and pepper. Enjoy!
