Ingredients:
- 1/2 lb fresh watermelon, 1/4 inch dice
- 1/2 lb fresh cantaloupe, 1/4 inch dice
- 1/2 lb fresh honeydew, 1/4 inch dice
- 1 each red bell pepper, fine diced
- 1 each red onion, fine diced
- 2 each jalepeno, very fine diced
- 3 Tbs. cilantro, chopped
- 2 Tbs. mint, chopped
- 1/8 cup rice wine vinegar
- juice of one lime
- kosher salt to taste
Instructions and Comments:
Peel and remove the seeds from the melons, dice into 1/4 inch cubes. Remove the stem and seeds from the bell pepper, fine dice along with the onion. Remove the seeds from the jalepeno and dice as fine as you can. Be careful not to rub your eyes or anywhere else sensitive after doing this. Wash your hands!! Chop the herbs and combine all of the ingredients. Salsa is best if it sits for about 8 hours. Serve and Enjoy!
