Black Bean and Corn Salsa

Ingredients:

  • 2 cups Frozen Kernal Corn
  • 1 can Black Beans (16oz can, drained)
  • 1/4 cup Diced Green Chiles (canned)
  • 1/4 cup Fine Diced Red Onion
  • 1.5 cup Ripe Tomato (diced)
  • 2 Tbs. Fine Chopped Cilantro
  • 1 Tbs. Fine Chopped Thyme
  • to taste kosher salt and pepper

Instructions and Comments:

Lightly oil a cookie sheet and spread the 2 cups of corn (frozen is fine) evenly on the surface. Roast the corn until it starts to brown slightly. Remove from the oven and cool. In a medium mixing bowl, combine all the ingredients listed. Season with kosher salt and freshly ground black pepper.
