12 ounces fresh cranberries
6 each valencia oranges
1/2 cup sugar
1 each jalapeno, seeds & stem removed, diced
1 cup red onion -- finely diced
2 tablespoons chopped fresh cilantro
Instructions and Comments:
You will never eat cranberry from a can again!
Wash and dry the oranges. Using a citrus zester, remove the outermost skin from two oranges and place it into a medium sized pot. Cut all of the oranges in half and juice them. Add the juice into the pot along with the sugar. Bring the contents to a simmer. Let it cook for about 10 minutes. Add in the diced jalapeno and onions. Simmer for about 2 minutes. Add in the cranberries and simmer again for about 5 additional minutes. By this time the sauce should begin to thicken all on its own. Some of the cranberries are breaking up.. This is where you remove the pot from the heat and place the contents into a shallow container. Add in the chopped cilantro and a pinch or two of salt. Place the sauce in the freezer until it as cooled completely.
Serve chilled in a serving dish. Garnish with orange zest and a leaf of cilantro. For a take no prisoners cranberry sauce, add another jalapeno.. Or whimpy mainstream with no jalapeno at all. Stellar Cranberry!
