Soft Shell Crab Sandwich

Ingredients:

    Serves 4
  • 1 cup flour
  • 1 tea. salt
  • 1 tea. pepper
  • 1 tea. granulated garlic
  • 2 each eggs, beaten and frothy
  • 2 cups bread crumbs or corn meal
  • 4 each soft shell crabs
  • 4 slice vine ripened tomato
  • 4 slice bermuda onion
  • 1 cup micro greens, or sprouts
  • 1/2 cup mayo
  • 1 tea. chile sauce
  • Canola Oil for Deep Frying, and 4 each of your favorite burger buns.

Instructions and Comments:

In a small mixing bowl, combine the mayo and chile sauce.
Heat the oil in the deep fryer to 350.
Combine the flour and spices in a shallow pan. Lightly coat each crab with the flour, then dip in the egg, then while still wet, dip and bread in the breadcrumbs or corn meal. Repeat this process with the remaining crabs.
Prepare the buns with the chile mayo, micro greens, tomato, and onions.
Fry each crab until golden brown. Remove from the fryer and drain excess oil on a paper towel. Assemble the same as a burger.... Enjoy!
