Ingredients:

- 2 cups white wine
- 1 tablespoon shallots -- chopped
- 1 teaspoon fresh garlic -- chopped
- 2 each bay leaf
- 1 teaspoon black peppercorns -- whole
- 1/2 cup mint-flavored apple jelly
- 2 cups beef consomme
Instructions and Comments:
Combine the white wine, shallots, garlic, bay leaf, pepper, and mint jelly in a medium sauce pot. Bring to a boil and reduce the wine until their is about 3/4 cup of liquid left in the pot. Add the beef consomm?and bring back to a simmer. Reduce the sauce by about 1/3. Strain the sauce through a chinois and reserve for service.
