Mint Sauce

Ingredients:

    Serving Size : 8
  • 2 cups white wine
  • 1 tablespoon shallots -- chopped
  • 1 teaspoon fresh garlic -- chopped
  • 2 each bay leaf
  • 1 teaspoon black peppercorns -- whole
  • 1/2 cup mint-flavored apple jelly
  • 2 cups beef consomme

Instructions and Comments:

Combine the white wine, shallots, garlic, bay leaf, pepper, and mint jelly in a medium sauce pot. Bring to a boil and reduce the wine until their is about 3/4 cup of liquid left in the pot. Add the beef consomm?and bring back to a simmer. Reduce the sauce by about 1/3. Strain the sauce through a chinois and reserve for service.
