Ingredients:
Crab Cake Mix:
- 1 lb blue crab meat
- 1/2 cup bread crumbs
- 3 Tbs fine diced red pepper
- 1 each finely chopped green onions
- 2 tea chopped garlic
- 2 tea chopped fresh dill
- 2 Tbs mayonaise
- 1 each egg, beaten
- 1 each juice of 1 lemon
- pinch cayenne pepper
- 2 tea dry mustard
- to taste salt and black pepper
for breading:
- 1 cup bread crumbs
- 3 each eggs beaten
- 1 cup flour
Instructions and Comments:
Combine the first list of ingredients and form small cakes out of the mix. Use a 1/8 cup measuring cup to make consistent sizes. Bread the cakes by first coating the cakes with flour. Next dip the cakes into the beaten eggs, then place them into the breadcrumbs. Pan fry the cakes in olive oil until they are golden brown in color.
