Pan Seared Sea Scallops

Ingredients:

    Serves 4
  • 1.5 Lbs Large Sea Scallops
  • 1 TbsOlio Carli Olive Oil icon
  • 1/4 cup marsala wine
  • 2 tea chopped garlic
  • 2 tea chopped parsley
  • 2 Tbs whole butter, room temperature
  • salt and pepper to taste

Instructions and Comments:

Heat the olive oil in a large non stick fry pan. When the oil just begins to smoke add the scallops flat side down. Sear the scallops until they are a dark golden brown. Turn and repeat on the other side. When you have reached a good color on the second side, add the chopped garlic and marsala wine. Be careful, marsala has a tendency to flare up! Add the parsley and simmer the scallops until the wine has nearly boiled away. Remove the pan from the heat. Add the butter a little at a time by swirling the pan around. Season with salt and black pepper. Serve over Spanish Rice or tossed into linguini for a light pasta.
