Ingredients:
- 2 each large tomatoes, vine ripened
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- 1 Tbs tomato paste
- 1 tea black pepper
- 1 tea ground cumin
- 2 tea chile powder
- 1 tea kosher salt
Instructions and Comments:
Start with the marinade. Whip together the vinegar and tomato paste. Follow by whipping in the olive oil a little at a time. Stir in the spices. Cut the tomatoes in half and remove the stem. Marinade the tomato halves for 3 hours. To Cook, grill the cut flat surface over high heat. Put the lid of your grill down and cook for about 2 to 4 minutes. They are done when the skin of the tomato starts to wrinkle. Serve with your favorite grilled meats and BBQ.
