Fried Green Tomatoes

Ingredients:

    (Serves four)
  • 4 medium-sized green tomatoes
  • 1 cup of cornmeal[not with sugar ]
  • 2 tablespoons bacon grease or if you like olive oil for a healthier oil, for frying.
  • salt and pepper to taste,

Instructions and Comments:

Cut tomatoes into quarters or thick slices add salt and pepper and let stand for 1/2 hour.
Drain juice,dip into corn meal and fry in the drippings. If needed add more fat to keep from burning. Brown both side and place on an absorbent paper.
Hint, to get the real Down-south Flava' ya' gotta' use the bacon drippins' instead of the olive oil, your choice "Flava' or Health", it's your call, at any rate, Enjoy.

p.s. Squash or Okra may be prepared the same way.
