Ingredients:
- Whole Garlic Cloves 4 each
- Whole Lemongrass Stalk 2 each (chopped)
- Dried Small Red Chilles 12 each (tops removed)
- Ground Coriander 1 Tbsp
- Ground Cumin 1 Tbsp
- Ground Black Pepper 2 teaspoons
- Chopped Cilantro Leaves 2 Tbsp
- Ground Galangal 2 teaspoons
- Lemon Peel 1 Tbsp (of one lemon)
- Lime Peel 1 Tbsp (of one lime)
- Kosher Salt 1.5 Tbsp
Method for Spice Madness:
- In a food processor, add the garlic, lemongrass, red chilles, cliantro, lemon and lime peel. Process on high speed until the ingredients start to come together. If you need to add a little oil to help the process, go for it. Next, turn off the processor and add the rest of the spices. Process for an additional 2 minutes.
Common Uses and other info:
- Rub this paste onto cuts of beef, chicken, or pork before roasting. This stuff will be hot, so be careful to wash your hands before touching your face or other body parts.
