Basics
Just as the name might suggest, Dill is used to make Dill Pickles. The leaves and seeds may be used. The seeds are the stronger of the two. Dill has been used for thousands of years. Even the Romans used dill and thought consumption and displaying it brought good luck. I personally think after consumption of dill that it makes you feel warm and fuzzy. Hence the word Weed after Dill. I love dill. It was the first herb I learned to use in my first years of cooking. Seared shrimp and scallops with cucumber dill cream. Sounds Warm and Fuzzy!

Aromatics and Flavors
Dried dill has the aroma of sun dried grass cuttings, the flavor is much the same. Fresh Dill has a pleasant aroma and flavor, and can be a little sharp.
Culinary Uses
Use dill in seafood and vegetable dishes. Carrots and fresh dill are a nice combination. As stated before, dill is also used to flavor cucumbers for pickling. The seeds are found in pickling spice.
