Lavender produces a very pleasing aroma. Highly perfume like when fresh. The flavor of Lavender is bitter to the end, quite opposite of the aroma and nothing like its cousin mint.
Culinary Uses
Lavender is used more in the making of tea, with its bitter flavors extracted when steeped, than in culinary. Added to a vinaigrette it can be quite pleasing.
