Basics
Lemongrass is a primary component in Thai cooking. The plant contains citral, which can be found in citrus fruit peel. This gives lemongrass its wonderful flavor. In Indonesian cooking, The stalks are cut into small pieces and added to soups and sauces.
Producers
Native to Asia, it is also cultivated in Africa and right here in Florida. Lemongrass likes a sandy soil, lots of rain, and a hot climate and is quite easy to come by fresh in the USA.
Aromatics and Flavors
Lemongrass smells and tastes like Lemon, though it is very fibrous and not very good to eat on its own. Even after cooking, the stalks are still very fibrous and hard.
Culinary Uses
Lemongrass is best in clear soups and sauces. Use it whole, sliced or macerated for best flavor. Quick marinades such as Chopped Lemongrass, Rice Wine Vinegar, Chopped Garlic, Minced Chilies, and fresh Cilantro can make a Roast Chicken come to life.
