Basics
Parsley has been cultivated for several thousand years. Today, primary use of this herb has been for garnishing plates either as a sprig or finely chopped. I prefer chopped, the leaves don't bruise easily and you can chop it very fine. This makes for a nice presentation without taking your eyes away from the primary components of the dish. As with mint, there are close to 40 varieties of parsley, Flat Leaf or Italian, and Curly Parsley. The Curley variety is easiest to come by and more widely available.

Aromatics and Flavors
Fresh and Peppery when fresh both in aroma and taste. The dried variety, smelling and tasting more like hay, will add color to a sauce but not much else.
Culinary Uses
Use in the same manner as Oregano and Basil. These herbs compliment each other very well, and can be used side by side in many applications.
