Another member of the mint family, Rosemary has been used in cooking and medicinal purposes for 2800 years or so.
Producers
Rosemary is native to the Mediterranean and likes warm climates, but will flourish in nearly any climate. It is produced heavily all over the world. In my Hometown of Phoenix AZ. It is used in the median of streets and makes a nice hedge.
Aromatics and Flavors
Rosemary smells and tastes like a peppery pine tree. When cooking just a few days ago, one of my cooks asked if we could use "tree" as a garnish. He was referring to Rosemary Skewers as they resemble a tiny pine tree.
Culinary Uses
Roast Meats are always nice with a little Rosemary. Add a whole sprig of rosemary to Citrus and Wine reductions. Rosemary and Thyme go very well together and both make a nice garnish for gamy meats.
