Sumac is the dried berry of the Sumac Bush. The berries themselves are red and very tart. It has been used as a souring agent in Mediterranean cooking for over a thousand years.

Sumac grows wild all over the mountain regions of the Mediterranean.

Sumac itself has very little aroma, but the sour flavor makes up for this lack. Sumac was used as a souring agent before lemons became available in the east.
Culinary Uses
Ground Sumac is the most common form and can be used the same as other ground spices.
