Basics
Tarragon is one of those herbs that grow well in a humid environment and can be found growing on my back porch. The French and other European Countries have been using tarragon in cooking for hundreds of years, and is considered one of the "fine herbs".
Producers
Tarragon is available year round with the advent of greenhouse grown produce. The best flavor comes from the summer harvest.
Aromatics and Flavors
Highly aromatic that is fresh, peppery with a slight hint of vinegar. The flavor of tarragon is somewhat like that of Anise
Culinary Uses
Bearnaise, a Hollandaise based sauce, is the most common culinary use of Tarragon. Make use of fresh tarragon to flavor fish, chicken, and some mild flavored vegetables.
